To help you use our cheese, we offer some suggestions!
Of course, any of our sharpnesses of Cheddar make wonderful Macaroni and Cheese! If in doubt, ask any of the Odessa Firefighters--they won't let Carm make anything else! And the cheddars go great with a warm piece of Apple Pie!!
Okay, Okay--so I will give out my recipe for Macaroni & Cheese--But, don't tell anyone you got it from me!
1 stick of BUTTER (no substitutions)
1 Cup of flour
1 1/2 qts. milk (of course, I use whole milk)
1 1/2 lbs of cheddar cheese (from Sunset View Creamery of course) I use Deep Seneca and either xx or Razor Sharp
6 cups of elbow macaroni, cooked and drained. (I salt the boiling water--it helps add flavor)
Melt the butter in a pan, stir in the flour until blended--add the milk and stir until thickened. Cut the cheese into cubes, and add to the thickened sauce--stir until melted. Pour over the cooked macaroni and either put in a casserole pan and bake or put in a large crockpot. ENJOY!
Another way to use some shredded cheese is sprinkle it over Chili or hot dogs.
For an extra ordinary Grilled Hamburger, sprinkle some garlic powder on the burger and top with a slice of KTM's Garlic Delight or Sneaky Pete (for a nice ZING), or any of your favorite flavors.
For snacking:
Scoops (the snack chips in the shape of a small bowl) with a cube of cheese in each one popped in the microwave for 5 seconds or in the oven for 5 or 6 minutes make a quick snack. You can use any of the cheeses or curd.
Slice Bagettes and sprinkle grated cheese (or thin slices) on each piece and bake in a 350 degree oven until toasty and the cheese melts. So far, we prefer the KTM's Garlic Delight and the Tomato Basil Jack but any of the flavored Jacks would be good.
If you are making a dish that calls for Mozzarella and you don't have any or you want a diferent flavor experience, try using cheddar curd. You can use it just as it comes out of the package or chop it up smaller, sprinkle it over your dish and bake as usual. We used Tomato Basil Curd in Lasagne and Chicken Parmesan and it was wonderful!
Do you have just a small piece of cheese left over that you don't know what to do with? Don't throw it away! Instead, grate it up (not real fine) and put into a zip lock bag and throw it in the freezer--then when you have another piece, do the same thing--just keep adding to the same bag--doesn't matter if they are the same kind. or different ones. Then, the next time you have grilled cheese or ham/cheese sandwiches, you can use the grated cheese instead of American. Gives your sandwiches a different flavor--and the best part is no two sandwiches will be the same!
Another idea for the "shreds" is to use them on Quesdillas--lay a tortilla out, add your chicken, whatever sauce you prefer, and sprinkle on the shreds--fold and bake. You can also use the "shreds" in wraps instead of using sliced cheese (it makes it easier to fold).
